OH ME, OH MAY, IT'S JULY.

Holy smokes, Parents, it's June!

As a child I quite often heard my mom comment on how fast the time goes... that and "is there life after laundry?" I thought she was crazy. Time took forever. A day felt like a year and Disney World might as well have been in outer space for as long as it took to get there. It made sense to ask "are we there yet?" every two minutes. Now that I'm older and much wiser (insert wink face emoticon here), I relate to my mom more and more, sometimes more than I'd like to (I swore I would never worry as much as her. False). Though I don't have kids of my own, I find myself wandering where the time goes and commenting to my menus that it seems like only yesterday I was piecing it together. Okay, so it's a bit of a stretch to relate creating a menu to that of say, a child, but I'm a lunch lady, so bear with me.

All of this jibber jabber to say, time has flown by once again as we find ourselves in June already. Though there is much to look forward to, there is much to look back on, which is why I am here to crowd your inbox. It's time for a look back at May!

All sorts of new things were tried, not only by my crafting hands, but the mouths of little children. I was quite pleased by how much all of us at Sunshine School were stretched when it came to the menu... me with creating and every one else with having to trust what I created.

A new favorite was Black Bean Soup...


Seeing as how tomato soup has been a fan favorite for quite some time now, one pre-schooler actually termed it "brilliant," I was anxious and excited to see how the kids would take to the black bean, especially seeing as how it's one of my personal favorites. Served up with baked tortillas and the perfect condiments, the kids gladly welcomed the black bean into the cool soup circle... oh yes, there is such a thing. I will say it seems to be the case that any time you want to try something new, just make sure you include condiments and it's sure to be a success. I need more than two hands to count the number of times I have slaved over a meal and heard rejoicing over the condiments. I have a love/hate relationship with condiments.

Okay, true confessions... I wrote that in June but time got away again and it is now JULY!! WHAT!?!

So... to keep you in the loop but not waste time with trying to find the perfect words or descriptions (who has time for perfectionism anyway?), here is a brief visual post on the months of May and June. Perhaps story form will commence in the month of July, but we'll cross that bridge when we get to it... or as I like to often say to myself when I get overwhelmed by the big picture, "one inch window, JJ." I can handle what I see through a one inch window. For now, here are a few things your kids have been learning, enjoying and fueling their growing little bodies with...


Pasta Salad

Sandwich on a stick

Popcorn cups: melt sunbutter, honey and vanilla, pour over popcorn and dried fruit and shape into popcorn balls. The kids loved it. Great gluten free snack.

 Veggie Pizza... A big hit.

 Cover with cheese and pop in the oven at 350 degrees for about 10 minutes.

 Banana Muffins disguised as cupcakes during crazy color combo week.


 Dinosaur week sandwiches


 Strawberry Grahams: a healthy s'mores alternative, but still fun and yummy.

 Frozen Sunbutter and Banana Cups: simply mix sunbutter and plain yogurt, add mix-ins if you like, top with bananas and freeze. They look decadent but contain lots of nutritional value. 

 Top with homemade whipped cream for a reaction that screams: "ICE CREAM CUPCAKES!" as one  excited three year old did.
